The Bar Has Been Set

Like most of America, I was absolutely inspired by the Harvard Business grad who paid off $90,000 of student loan debt in 7 months. Alas, I’m not going to be able to do that, BUT – I would like to make a dent in my loans this year. Even though I’m going to France for a month this summer, I’m still plan to be financially mindful. I’ll post my apartment to be sublet while I’m gone, and I hope to squeeze in as much work as possible before I leave. I’ll also try to plan free/inexpensive outings with friends, opting for museums, music festivals, art exhibits and movies in the park over eating out and other costly forms of entertainment. I’ll also bring my lunch/dinner to work, and go easy on the grocery tab. You wouldn’t think Cosmo magazine would be a source of culinary delights, but I found this recipe when I was flipping through an issue.

Gorgonzola and Fig Pizza

I kind of love the combo of gorgonzola cheese, and I already had fig jam (Bonne Maman), arugala, and a whole wheat pizza crust from Trader Joe’s. All in all the whole thing cost under $5, and gave me two meals. Such a bargain, eh?
